It is a cured cheese, from semi-hard to extraneous, slightly brittle, unctuous, orange / brownish color, with few or no eyes, obtained by prolonged maturation of Cured Sheep Cheese.
Ingredients: Raw sheep’s milk, sea salt, thistle flower and paprika.
Type of Cure: Minimum curing period of 90 days, from semi-hard to hard paste.
