The Winery
Winery Madre de Água – Serra da Estrela is located in the Dão region, producing some of the finest national wines, holders of great quality and elegance. Its history, its contrasts, its vineyards surrounded by a range of mountains that protect them from external influences, give these wines unique characteristics of aroma and flavor. A terroir of excellence, where the Farm Madre de Água – Serra da Estrela stocks are implemented, many already existing when the land was purchased by the current owners. This is the case of vineyards in the Santo António Farm and in the Regada Farm, which are between 15 and 40 years old.
The passion for wine was another dream come true. The conditions of excellence, combined with the existing vineyards and the desire to plant more vineyards to produce quality wines, was the natural step to take. Currently, Farm Madre de Água – Serra da Estrela has 16 hectares of vineyards, divided between their farms, with white and red, domestic and foreign grape varieties. The vineyards are planted at an altitude of 600 meters.
The vineyards, that have repeatedly won awards along with Dão’s best, are worked on by a knowledgeable and passionate team. Over these years a strategy has been defined to collect data of the terroir and the plant to take advantage of the best grape. The harvests are always carried out manually, in that the production per hectare is controlled to obtain the best grapes. In the wine cellar, the best grapes are selected. The first experiments carried out in 2011 and in the following years, these helped to test the grapes quality, and only from 2015 on were the first crops released, having now a clear investment in monovarietal wines.
White varieties: Encruzado, Gouveio, Bical, Semillon
Red varieties: Tinta Roriz, Touriga Nacional, Jaen, Alfrocheiro, Syrah, Merlot and Carbernet Sauvignon
The grapes, thus far vinified in a rented cellar a few kilometers away, will soon have a new address in the Farm Madre de Água – Serra da Estrela, as soon as the necessary conditions are met to move forward with this new project: a new cellar will be built in the Caramuja Farm, this will result from the renovation and adding new additions to a century-old wine cellar, equipped with the most modern technologies and accommodations, where various activities of wine tourism will be held.

Paulo Nunes
With a degree in Food Engineering, and a Masters in Food Quality and Technology from the Escola Superior Agrária of Viseu.
His professional experience includes the Institute of Vine and Wine, the consulting firm “Vines & Wines” and the creation of the project “Decision wines” in the Demarcated Region of Távora-Varosa. From 2010 and beyond he becomes the Consultant Winemaker of several estates of the Dão region.
